
Ingredients:
85g Udon noodle, 500ml Prima Taste Prawn Stock
1 tsp fish sauce, 2-3 prawns, 1 star anise, sliced mushrooms, sliced gingers, pinch sugar, handful mint, coriander leaves, lime, chopped red chilli, to serve.
Method:
Boil the udon until al dente, then drain. Put the prawn soup base in a pan with the fish sauce, star anise, ginger, mushroom and pinch of sugar. Bring to the boil and add the udon and prawns. Warm through, then pour into a bowl and serve topped with mint, coriander, chilli and lime.
This speedy, simple soup has maximum flavour with minimum ingredients.
